This Greek inspired recipe is packed with flavour and perfect any day of the week.
Grilled Chicken Tzatziki Salad
Ingredients
- 4 boneless, skinless chicken breasts, cut into small chunks
- 1 C plain greek yogurt
- 2 tbsp fresh lemon juice
- 1/2 tsp each dried oregano, ground cumin, smoked paprika
- 1/4 tsp each, ground cinnamon, ground cardamom, black pepper
- 1 tsp kosher salt
- 2 tbsp olive oil
- 1 1/2 C Plain Greek yogurt
- 1 clove garlic, minced
- 2 tbsp fresh lemon juice
- 2 tbsp red onion, finely chopped
- 1/2 medium cucumber, peeled and grated
- 1 tsp dried dill weed
- 1/2 tsp kosher salt
- 1/2 tsp black pepper
- Romaine Lettuce
- Tomatoes
- Red Onion
- Cucumber
- Kalamata Olives
- Feta Cheese Crumbles

Instructions
- Combine yogurt, spices, lemon juice, olive oil and salt and mix until combined. Add chicken to the yogurt mixture and marinade for at least 30 minutes, up to overnight.
- Place chicken on bamboo skewers that have been soaked in water. Grill over medium-low heat for 20-25 minutes or until cooked through.
- Combine all sauce ingredients in a medium sized bowl and refrigerate until ready to use.
- Chop vegetables and arrange on a plate. Lay cooked chicken skewers over the salad and top with the tzatziki sauce and a drizzle of olive oil.
