Spiced Apple Cakes

Yield: 12 cakes


  • 3 eggs
  • 1 cup sugar
  • 1 tsp vanilla extract
  • 1 1/4 cup all purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 1/4 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp cloves
  • 3/4 cup butter, melted
  • 1/2 cup milk
  • 3 large apples, peeled, grated


  1. Preheat oven to 350F.
  2. Lightly butter two large 6-cup muffin pans, coat with sugar and set aside. Sift together flour, baking powder, salt, cinnamon, nutmeg and cloves. In a separate bowl, mix together milk and melted butter. In a large bowl, beat eggs and sugar with electric mixer until light and foamy.
  3. Using a spatula, alternately fold the dry and wet ingredients into the egg mixture. Add in the grated apple.
  4. Immediately spoon batter into prepared pans and bake for 20 minutes, or until a tooth pick inserted into the middle comes out clean.
