With a beautiful variety of tomatoes and colours, this salad is as delightful to look at as it is to eat.

Rainbow Tomato Salad

Yield: 6 servings


  • 8 tomatoes, sliced, (various colours and sizes)
  • 1/4 cup chopped chives,
  • 4 baby bococcini, sliced
  • 1/4 cup fresh basil leaves, torn
  • Dressing
  • 6 tbsp olive oil
  • 2 tbsp balsalmic vinegar
  • salt and pepper to taste


  1. Arrange tomatoes, onions, and bococcini on a large plate or in a bowl.
  2. Whisk together dressing ingredients.
  3. Drizzle dressing over salad, season, and top with basil.
